Whether Hemingway created this cocktail or not is the subject of much speculation. If it’s true that Hemingway said “Write drunk; edit sober,” then this is the cocktail he was drinking.
The 1920s version calls for an ounce and a half of absinthe, but at around 60% ABV, that’s quite a potent drink. Feel free to adjust the quantity of absinthe to your taste and tolerance level. It’s wise to be selective in the absinthe you choose in this cocktail since it’s prominently featured and not simply a rinse. Letherbee makes a delicious barrel-aged absinthe, and Lucid makes a high-quality standard absinthe.

A favorite of Hemingway's, this champagne cocktail packs a powerful punch with a hefty portion of absinthe, which is normally over 60% ABV.

Ingredients

  • ounce absinthe
  • 3-5 ounces brüt champagne

Instructions

  • Pour absinthe into a chilled champagne flute and swirl to coat the interior.
  • Top with champagne.

When I developed this cocktail in 2020, I had just discovered Charanda—a sugarcane-based spirit distilled in Mexico. The bottle that I was specifically enjoying was Uruapan’s Charanda Blanco. This particular bottling is created through two distillation methods.
