Hummus Veggie Wraps

Ingredients

Hummus

  • 1 can garbanzo beans (liquid reserved)
  • .25 cup parsley (chopped)
  • 4 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons tahini
  • 1 clove garlic
  • 1 teaspoon salt
  • .5 teaspoon cumin
  • black pepper (to taste)
  • .125 teaspoon sesame seed oil (optional)
  • 1 teaspoon crushed red pepper (optional)
  • .5 teaspoon paprika (optional)

Veggie Wrap

  • 2 large tortillas
  • hummus (see recipe above)
  • spinach (enough to cover tortilla)
  • .5 cucumber julienned
  • .25 cup cherry tomatoes (diced)
  • .125 cup red onion (diced)
  • .125 cup carrots (shredded)
  • goat cheese crumbles (feta cheese works well too)

Instructions

Hummus

  • Add all ingredients in a blender and blend until smooth.
  • Use the reserved liquid from the can of garbanzo beans to achieve the desired consistency by adding in small quantities and continuing to blend.

Veggie Wraps

  • Heat the tortillas in the microwave for 20 seconds to make them easier to roll.
  • Spread a layer of hummus over the surface of the tortilla and cover with spinach leaves.
  • Layer the cucumber, cherry tomatoes, red onion, carrots, and goat cheese crumbles, making sure not add too much.
  • Roll the tortilla, secure with toothpicks, and cut in half.
