Kräuter Sauer

While most Underberg cocktails are all on board the bitter bandwagon, The Kräuter Sauer opts for balance. This vermouth-based cocktail is an exceptional use for a bottle of Underberg, which adds the perfect amount of herbal and bitter notes to what would otherwise be a flat recipe.

This shim showcases Underberg, and I’d almost go as far as to call it the base spirit for the recipe, despite it being the least represented in the ingredients list. (One bottle of Underberg is .67 ounces.)

The quality Dolin Blanc mellows out the Underberg and I almost get some vanilla type notes. This is an excellent cocktail to introduce someone to Underberg.

Kräuter Sauer

Ingredients

  • 2 ounces Dolin Blanc Vermouth
  • 1 bottle Underberg Bitters
  • ¾ ounce lemon juice
  • ¾ ounce simple syrup

Instructions

  • Shake all ingredients with ice then strain into a chilled coupe glass.
  • Garnish with an expressed lemon peel.
  • Any remaining cocktail should be served in a sidecar with the empty Underberg bottle inverted.
